two medium-sized zucchini,
blend of spices with vegetables,
1 tablespoon chopped parsley
Peel zucchini, cleaned of seeds, and a good squeeze plane.
Whisk eggs, add the spice mixture of vegetables, parsley, oregano and pepper.
Add well-squeezed zucchini and flour until desired consistency (5 to 6 tablespoons).
Mix until the mass becomes homogeneous.
On well heated oil placed small piles of dough and flatten them instantly with a spoon.
Fry on both sides.
They are very tasty and crunchy, you can serve with a salad and are especially tasty with a quick coating of pickled peppers.
