Fried Eggplant




Ingredients:

600 g eggplant,
100 g flour
100 g bread crumbs,
2 eggs,
oil,
salt.

Preparation:

Wash eggplant, peel, cut into thick slices 2 to 3 mm, salt and leave to drain and tender.
Wash and dry.
Each slice press by palms, roll in flour, then in bread crumbs and scrambled eggs and put that fried in hot oil until golden brown on both sides.
